Winemaker Notes

Our sparkling wine is crafted in house in the traditional method champenoise and carefully riddled on wooden racks. It's then meticulously disgorged, dosaged, and bottled by hand. This sparkling wine has heavy flavors of granny smith apples and bright acidity. No dosage was added before bottling.  — Scott Ballew

Production Notes

100% Chardonnay white wine grapes are handpicked by our winemaker Scott Ballew at brix and ripeness specifications. They are delivered by the ton to Strey Cellars in whole clusters, then whole cluster pressed immediately onsite. During fermentation, the wine is temperature controlled at 54 degrees for a delicate and enhancing mouthfeel. It is then filtered, bottled and put into tirage for at least a year. The wine disgorged, dosaged, and corked by hand in a slow and careful process.
